How does it know an email is a quote?

It looks for sent emails with an offer, a price or an attachment named quote, offer or proposal. You can also tag an email as a quote yourself.

Can it send follow-ups without asking?

Only if you switch sending to Alone. By default every follow-up waits for your OK.

How many times will it follow up?

Twice at most by default, a week apart. Change the timing or the number in its settings.

Will it sound like a robot?

It writes short, plain emails based on how you write. Edit any draft and it learns from your changes.
